Het restaurant
Poinciana opende zijn deuren in 2015 met een gloednieuwe eigenaar Seta Jaundoo. Wat eerder het Franse restaurant 'La Belle Vie' was geweest, werd gekocht door de ondernemende assistent -chef -kok. Het restaurant werd omgedoopt tot Poinciana na de prachtige flamboyante bomen die ons Caribische paradijs neerzetten. Oorspronkelijk uit Guyana, is Seta al meer dan twintig jaar op St.Kitts, en al die jaren brachten door met koken in lekker eten en luxe vestigingen.
