Het restaurant
Poinciana opende zijn deuren in 2015 met de kersverse eigenaar Seta Jaundoo. Wat voorheen het Franse restaurant 'La Belle Vie' was, werd gekocht door de ondernemende assistent-chef-kok. Het restaurant werd omgedoopt tot Poinciana, naar de prachtige flamboyante bomen die in ons Caribische paradijs staan. Seta, oorspronkelijk afkomstig uit Guyana, is al meer dan twintig jaar op St.Kitts en heeft al die jaren gekookt in gastronomische en luxe restaurants.
