Led by acclaimed Aruban chef Urvin Croes, Infini transforms dinner into an interactive culinary performance, with guests seated around an open kitchen and the chefs preparing, presenting, and explaining each creation throughout the evening. The current Menu XVI, “A Journey Through Time,” explores the cultures, traditions, and ingredients that have shaped the Caribbean, combining local flavors with contemporary techniques and global influences.
The menu changes periodically and showcases carefully selected seasonal products, locally sourced ingredients, fresh seafood, premium meats, tropical fruits, vegetables, and creative desserts. Current dishes include combinations such as sweet potato with tuna and Caribbean spices, amberjack with melon and jalapeño, turbot with shrimp and mussels, keshi yena, sirloin with Creole and harissa flavors, and playful desserts inspired by Caribbean ingredients. The evening concludes with Infini’s signature Bahama Mama Cupcake farewell gift.
